Gary Robins

Gary Robbins – Knebworth Chef 

I was educated at Bedford Modern school and left after my GCSE's to study catering for two years where I achieved a Merit in BTEC National in Hotel, Catering and Institutional operations, NVQ 1 and 2 in food preparation, food hygiene certificates for basic and intermediate and basic health and safety at work. I then went on to f work experience at the Greenhouse in London under the eye of Gary Rhodes. Sadly I couldn't afford to move to London so I began work in a local pub/restaurant where I learnt to cope with the pressures of service, something college certainly hadn't taught me. After that I went to the Barns hotel and worked my way through the ranks before leaving to start as Sous chef for St Helena Restaurant, a 60 cover fine dining on the outskirts of Bedford. After a couple of years there I needed a new challenge so I took the position of head chef/manager for a small gastropub where I was awarded the Le Routiers accolade. I was also voted for the TV programmes local food hero. I came to Knebworth in December 2007 initially just to help out over Christmas but the position of Sous chef came up and it seemed time for a change of direction from fine dining to catering for numbers I'd never cooked for before. In my previous kitchen I was catering for 28 covers a time and now it's anything up to 1000. I hope to find a position as Head chef in the near future to continue my career.
